Iron catechol complex
WebMay 1, 2003 · Iron-binding of pure phenolics was determined using the two-wavelength method of Brune et al. (1991) that measures the binding of iron (Fe 3+) to catechol- or galloyl groups. The absorbance peak for the iron-catechin and iron-tannic acid complexes occur at 680 and 587 nm, respectively, but the spectra for these complexes overlap. WebIron-mediated oxidation of catechol is a slow process 9, therefore, the main mechanism responsible for discolouration of iron-fortified, phenolic-rich food products is expected to be iron-catechol complex formation. This study, therefore, focusses on discolouration resulting from fast complexation between iron and catechol.

WebJan 21, 2010 · The type of iron-catechol complex present depends on the iron-catechol ratios. Mono-coordinate complexes form preferentially at higher ratios. Catechol is also oxidized enzymatically or in the presence of oxygen and heavy metals. In these cases, one electron is transferred to molecular oxygen and a superoxide is formed.
